The Profile: A complex and syrupy cup that bridges the gap between the bright acidity of a washed process and the heavy body of a natural. This Rwanda Kibirizi features a distinct floral aroma, followed by notes of red currant, golden honey, and a crisp green apple finish.

The Process: Grown in the high-altitude hills of the Nyamagabe District, these cherries are processed using the Honey Method. The outer skin is removed, but the sticky fruit mucilage (the "honey") is left on the bean during drying. This allows the sugars to deeply penetrate the bean, resulting in a rounded mouthfeel and enhanced sweetness that shines in both filter and espresso pours.
